Ingredients
  

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet ranch dressing mix
  • 1 cup chicken broth
  • ½ cup cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup chopped green onions
  • 8 hamburger buns
  • lettuce, tomato slices, and pickles optional toppings

Instructions
 

  • Place chicken breasts at the bottom of the crock pot.
  • Sprinkle ranch dressing mix evenly over the chicken.
  • Pour chicken broth over the top.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours until chicken is tender.
  • Shred the chicken directly in the crock pot using two forks.
  • Stir in softened cream cheese and shredded cheddar cheese until melted and smooth.
  • Let the mixture simmer for another 15-20 minutes on low.
  • Spoon the creamy shredded chicken onto hamburger buns.
  • Top with chopped green onions and any desired toppings like lettuce, tomato, or pickles.

Notes

To mix things up, swap cheddar for Pepper Jack or Monterey Jack cheese. Chicken thighs work great too. Leftovers can be refrigerated for 3 days or frozen for up to 2 months. Serve with coleslaw, fries, or a fresh salad for a full meal.
