Sesame Chicken Delight

Ingredients
  

  • 1 lb boneless, skinless chicken breasts cut into bite-sized pieces
  • ½ cup cornstarch
  • ¼ cup vegetable oil
  • ¼ cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • ¼ cup sesame seeds
  • 2 green onions sliced for garnish
  • Cooked rice for serving

Instructions
 

  • Toss the chicken pieces in a large bowl with the cornstarch until evenly coated. Shake off any excess.
  • Heat the vegetable oil in a skillet or wok over medium-high heat. Add the chicken in a single layer and cook for 5-7 minutes, flipping occasionally, until golden brown and cooked through. Remove and set aside.
  • Lower the heat slightly and, in the same skillet, add soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger. Stir and bring to a gentle simmer.
  • Return the crispy chicken to the skillet, tossing to coat evenly in the sauce. Cook for another 2-3 minutes until the sauce thickens slightly.
  • Sprinkle sesame seeds on top and serve over warm rice. Garnish with sliced green onions.

Notes

For extra crunch, avoid crowding the pan while frying. Double the sauce ingredients for more dipping! Store leftovers in an airtight container in the fridge for up to 3 days.
