Ingredients

  • 1 batch homemade or store-bought brownies about a 9x9-inch pan, cut into bite-sized squares
  • 2 cups whipped cream or whipped topping
  • 1 cup vanilla pudding tinted green with food coloring
  • 1 cup crushed mint chocolate cookies such as Thin Mints
  • ½ cup chocolate shavings or chocolate chips
  • Fresh mint leaves for garnish
  • Green food coloring optional, for a festive touch

Instructions

  • Prepare your brownies according to your favorite recipe or use a box mix. Allow them to cool completely, then cut into bite-sized squares.
  • In a bowl, mix vanilla pudding with a couple of drops of green food coloring until you achieve your desired shade of green.
  • In a trifle dish or individual serving glasses, start layering with brownie squares at the bottom.
  • Add a layer of green-tinted vanilla pudding over the brownies.
  • Spread a layer of whipped cream over the pudding, making it light and fluffy.
  • Sprinkle a generous amount of crushed mint chocolate cookies over the whipped cream.
  • Repeat the layering process with brownies, pudding, whipped cream, and cookies until the dish is full, ending with a whipped cream layer on top.
  • Garnish with chocolate shavings or chocolate chips and fresh mint leaves for a festive presentation.
  • Refrigerate for at least an hour before serving to let the flavors blend and chill properly.

Notes

If you don’t have mint chocolate cookies, you can use crushed Oreos with a drop of mint extract for a similar flavor. For best presentation, use a glass dish to showcase the layers. Make ahead the night before for a stress-free party dessert. Store leftovers in the fridge for up to 3 days.
